Correlation between antioxidant and physicochemical parameters of honey samples from Bosnia and Herzegovina and Turkey

Abstract

Honey samples from Bosnia and Herzegovina and Turkey — including honeydew, monofloral, and polyfloral varieties — were analyzed for antioxidant activity (ABTS and DPPH assays), total phenolic content (TPC), total flavonoid content (TFC), proline content, and colour. A strong correlation was demonstrated between antioxidant activity and TPC, TFC, proline content, and colour. Honey colour showed the best correlation with TFC, with darker-coloured honeys exhibiting higher flavonoid content.
